Method

Cook the Shrimp
  1. Melt butter in a large skillet over medium heat. Cook the shrimp in batches for about 2–3 minutes per side until pink and lightly golden. Remove from the pan and set aside.
Cook the Vegetables
  1. In the same skillet add the diced roasted red peppers and fresh spinach. Cook until the spinach wilts.
  2. Add the minced garlic and cook for about 1 minute until fragrant.
Make the Cream Sauce
  1. Pour in the heavy cream and stir. Add the freshly grated parmesan cheese and allow it to melt into the sauce. Season with salt and pepper to taste.
Combine the Pasta and Shrimp
  1. Add the cooked spaghetti and reserved pasta water to the skillet. Return the shrimp to the pan and toss everything together until the pasta is coated in the creamy sauce.

    Made this tonight it was fabulous! Aldi was out of Parmesan cheese today so I went with fresh grated Asiago instead and it did not disappoint!
