🥞 It makes the prettiest pancakes (seriously, look at them) and it’s made with einkorn — the only wheat that’s never been hybridized. That means it’s lower in gluten, easier to digest, and it’s even regenerative organic certified. Just good stuff from good people.

And because I can’t leave well enough alone 😅 I made a high-protein cannoli dip to go with it — and you need to try this! Here’s the recipe so you can save it:

✨ Protein Cannoli Dip

2 cups low-fat ricotta cheese
1 cup plain Greek yogurt
½ cup powdered sugar
1 teaspoon vanilla extract
2 scoops vanilla protein powder
½ cup mini chocolate chips (plus more for topping)

Just blend everything (except the chocolate chips) until smooth — you can use a blender or food processor. Then fold in the chocolate chips, and sprinkle a little extra on top. That’s it! It does taste best if you can chill it in the fridge before serving and you definitely can make it ahead of time! Takes 5 minutes and makes pancakes feel extra. It’s also great as a dip for fruit or with graham crackers, whatever your kids grab first. 😂

This past year and a half, I’ve really cherished our time together. We’ve had some of the best talks—no surprise since we both love to talk! Even Wonder loves being around her. 

So many of the recipes I make today were passed down from her, and I’ll always be grateful for the love and care she put into everything.

Baked Lemon Honey Salmon! This perfect busy night Baked Lemon Honey Salmon! This perfect busy night meal is simple yet delicious! I’m obsessed with minimal clean up meals! 

Ingredients:
- Salmon steaks (4)
- Lemons (2)
- Asparagus (optional)
- Salt
- Pepper
- Cooking oil spray
- Honey (½ cup)
- Brown sugar (1-2 tbsp)
- Soy sauce (3 tbsp)
- Minced garlic (1-2 tbsp)
- Sriracha sauce

Directions:
1. Slice 1-2 lemons into 12 thin slices.
2. Spray a 9x12 glass dish with cooking spray and add the lemon slices.
3. Pat dry the salmon steaks and place them on top of the lemon slices.
4. (Optional) line the exterior of the salmon with veggies like asparagus. Season with salt, pepper, and a light oil spray.
5. In a bowl, mix honey, brown sugar, soy sauce, minced garlic, and a dash of Sriracha.
6. Brush half the sauce on the salmon and bake at 375°F for about 14 mins.
7. Remove from the oven, brush with the remaining honey mixture, and broil for 3-5 mins.

I’m all about the meals you get make in less than 30 minutes.  I have 3 super busy kids with all their sports and activities that most meals have to take less than 30 minutes to make!

I’ve never cooked with titanium before so I didn’t know what to expect — but this pan is freaking amazing. NOTHING sticks. At all! It still looks brand new after using it (like, how?!). It cleans like a dream, and it’s massive — perfect for my big family meals.

A cookies & cream protein shake that even your inner child (or your actual child) will steal sips of. It’s creamy, chocolatey, and packed with protein—plus we’re making it fun with a chocolate syrup-rimmed glass, because why not?!

Here’s what you’ll need:

	•	1 cup milk (any kind)
	•	2 scoops cookies & cream or vanilla protein powder
	•	½ cup vanilla or plain Greek yogurt
	•	1 banana (frozen or fresh)
	•	3 Oreo cookies
	•	½–1 cup ice (add after blending)
	•	Chocolate syrup (for decorating the rim)

How to make it:

	1.	Blend everything except the ice and chocolate syrup until smooth.
	2.	Add the ice and blend again for a thick, slushy consistency.
	3.	Drizzle chocolate syrup around the rim of your glass.
	4.	Pour, sip, and feel like a kid with abs.

High protein, high fun, low guilt. Save this one for when you want your shake to feel like a treat!

June will mark three years into my(our) grief journey.

Losing someone who means the world to you creates an indescribable fog — one that lingers for months, and sometimes years. You’re changed in a way that only those who have experienced it can truly understand. Part of you died too.

I know some may wonder why I’m “not over it.” But the truth is, not a day goes by that I don’t miss her. Honestly, what hurts most is not what I lost, but what my children no longer get to experience, especially during their childhood.

When you love — and are loved — by someone who gives you the sun, moon, and stars, the pain never really goes away. Instead, your heart grows bigger...and a little harder.

Grief opens you to people you never thought you’d connect with. It also makes certain things unexpectedly difficult: listening to music, answering the phone, even making small talk.

But the hardest thing for me? It’s witnessing my children’s firsts.

Trying a new activity. Walking into a new school. Finding success in something they’ve worked so hard for.

These are the moments where I feel the ache the most — knowing she would have been there, cheering them on, championing every step. 

And instead, she’s not.

Grief doesn’t ask for permission. But it does teach us a hard life lesson.  How to work through pain and challenges you never imagined you would have experienced. To continue to smile and count your blessings. 

Mom… Mamo… I pray that somehow you are still seeing these firsts. The kids are doing great, and so much of that, I attribute to all you did for them.  Everyday that they laugh and smile is a blessing I don’t take for granted. You would be so proud of them. ❤️

If you were here I would give you a big teethy smile, say thank you, and tell you I love you, just one more time. 

Mom, I hope you would be proud. 

Love you always and miss you more. ❤️

Homemade Pasta Rosa A 20 to 30-minute, one-pot me Homemade Pasta Rosa

A 20 to 30-minute, one-pot meal that’s perfect for busy families who want a home-cooked meal without the fuss. This dish warms up great for leftovers. You can make enough for 3 days of lunches, to put in your kids’ thermos to take a break from sandwiches. 

🛒 Ingredients:
2 tablespoon butter
1 cup mushrooms sliced
2 cloves garlic minced
2 cups fresh spinach
1 can 14.5 oz diced tomatoes
1 ½ cups your favorite spaghetti sauce
¾ cup heavy cream
12 oz noodles
½ cup freshly grated parmesan cheese

1. Cook the noodles according to package instructions until al dente. Drain and set aside.
2. In a large skillet, melt butter over medium heat. Add mushrooms, garlic, and spinach sautéing until soft and fragrant.
3. Stir in diced tomatoes and spaghetti sauce, letting it simmer for 5 minutes.
4 Turn off heat and pour in the heavy cream, stirring to combine.
5 Add the cooked noodles to the sauce, tossing to coat evenly.
6. Sprinkle with freshly grated parmesan before serving. Enjoy!

I think a lot had to do with the crazy fall schedule which means you really need simple, easy clean up, quick meals. I don’t know about you, but our spring schedule is as crazy as the fall! So here’s your reminder, add this simple meal to your weeknight meal planning! (You better be meal planning!) 😘

**One-Pot Chicken, Rice, and Green Beans**
The perfect solution for a busy weeknight meal that’s ready in just 30 minutes and only requires one pot! 🍗🍚

**Ingredients:**
- 2 large boneless, skinless chicken breasts, cut into small tenders and pounded
- 1 ½ cups long-grain white rice
- 2 ¾ cups chicken broth
- 8-10 ounces of frozen cut green beans
- 10 grape tomatoes diced (optional)
- 1 tablespoon olive oil
- 1 tablespoon butter
- 2 tablespoons to ¼ cup flour
- 1 teaspoon paprika
- Salt and pepper, to taste

**Instructions:**

1. Season both sides of the chicken breasts with salt, pepper, paprika, and flour.

2. In a large skillet or pan, heat olive oil and butter over medium-high heat. Add the chicken breasts and cook for about 4-5 minutes on each side until they turn golden brown. Remove the chicken from the skillet and set it aside.

3. Stir in the rice, add the chicken broth and then add the green beans to one side. Bring to a low simmer.

5. Place the browned chicken breasts on top of the rice mixture. Cover the skillet with a lid and reduce the heat to low. Let it simmer for 15-20 minutes, or until the rice is cooked and the chicken is fully done.

6. Once the rice is cooked and the chicken is tender, remove the skillet from heat. Allow it to rest for a few minutes before serving. 

Enjoy your hearty and comforting one-pot meal! 🥘
