This hummus quesadilla is crispy lavash filled with warm, creamy hummus, melty Armenian string cheese, and a sprinkle of Aleppo pepper. It takes about 10 minutes, and it’s become one of our favorite lunches and after-school snacks.

The Story Behind This Hummus Quesadilla

I’ll be honest. When my best friend told me to try this, I was hesitant. Warm hummus? In a quesadilla? I couldn’t picture it.

But she was right. The hummus turns soft and creamy as it warms, the string cheese melts into those long, stretchy strands, and the lavash crisps up beautifully in a little butter. It’s exceptional, and now it’s on repeat in our house.

Why You’ll Love This Hummus Quesadilla

  • Ready in about 10 minutes. Perfect for a quick lunch or an after-school snack.
  • Only a few ingredients. Lavash, hummus, string cheese, and a pinch of spice.
  • Easy to change up. Swap the cheese or the seasoning to make it your own.
  • Budget friendly. It costs a fraction of a takeout lunch.

What Is Armenian String Cheese?

Armenian string cheese is a mild, slightly salty white cheese that’s stretched into strands and twisted into a braid. It’s often studded with nigella seeds, tiny black seeds with a gentle oniony flavor. You pull it apart strand by strand, which makes it fun to eat on its own and perfect for melting.

In this quesadilla, the strands melt into a cheese pull that’s hard to beat. Paired with Aleppo pepper, a mild and fruity chili flake, it gives a familiar snack a little Armenian twist

Hummus Quesadilla Ingredients

You only need a handful of ingredients, and you might already have most of them.

  • Toufayan lavash: Thin, soft flatbread that crisps up perfectly in the pan.
  • Hummus: Use your favorite store-bought kind or homemade. A thin layer is all you need.
  • Armenian string cheese: Pulled apart into strands so it melts evenly.
  • Aleppo pepper: Mild, fruity warmth. Optional, but so good.
  • Butter: For a golden, crispy outside.

  1. Step 4: Crisp. Cook in melted butter over medium to medium-low heat until golden and crispy on both sides.

What to Serve with a Hummus Quesadilla

  • Sliced cucumbers, tomatoes, and olives
  • A simple salad
  • Extra hummus or muhammara for dipping
  • A bowl of soup for a cozy lunch

Hummus Quesadilla Substitutions

No Armenian string cheese or Aleppo pepper on hand? No problem. Here are easy swaps.

  • Cheese: Mozzarella, Oaxaca, or Monterey Jack all melt beautifully.
  • Aleppo pepper: Use za’atar instead, or skip the spice to keep it simple for kids.
  • Lavash: A large flour tortilla works in a pinch, though lavash gets crispier.
  • Butter: Olive oil works too.

Easy Hummus Quesadilla Variations

The filling is easy to change up, so have fun with it.

  • Flavored hummus: Try roasted red pepper, garlic, or spicy hummus.
  • Add greens: Tuck in a handful of baby spinach before folding.
  • Add protein: Leftover shredded chicken makes it a heartier lunch.
  • Za’atar crunch: Sprinkle za’atar on the outside after crisping.

Equipment for a Crispy Lavash Quesadilla

  • Large skillet or nonstick pan
  • Spatula
  • Butter knife or spoon for spreading the hummus

How to Store and Reheat a Hummus Quesadilla

This quesadilla is best right out of the pan, while the lavash is crispy and the cheese is stretchy. If you have leftovers, store them in an airtight container in the fridge for up to 2 days. Reheat in a dry skillet over medium-low heat to bring back the crunch.

Top Tip for the Crispiest Lavash Quesadilla

Keep the heat at medium to medium-low and be patient. Lower heat gives the cheese time to melt all the way through while the lavash turns golden and crispy instead of burning.

Hummus Quesadilla FAQ

Is warm hummus good?

Yes! Warm hummus turns soft and creamy, almost like a melty spread. I was skeptical too until I tried it.

What can I use instead of Armenian string cheese?

Mozzarella, Oaxaca, or Monterey Jack all melt well.

Can I make it without butter?

Yes. A drizzle of olive oil or a dry nonstick pan works.

Is this a good after-school snack?

It’s one of our favorites. It’s fast, filling, and easy for older kids to make on their own

Where can I find lavash?

Look for Toufayan lavash in the bread aisle or deli section of most grocery stores.
