One Pot Chicken Balsamic

Indulge in this tender, flavorful chicken drenched in a sweet and tangy balsamic sauce, complemented by the freshness of grape tomatoes. Perfect for a cozy night in!

This was inspired by my one pot recipes on this site, and pairs well with fatoosh salad.

Ingredients

Get ready to transform your dinner with a handful of simple, flavorful ingredients.

  • chicken
  • Italian seasoning 
  • salt and pepper
  • butter
  • balsamic vinegar
  • honey
  • garlic
  • grape tomatoes

Instructions

  1. Step 1: Sear the chicken in a hot pan.
  1. Step 2: Add the garlic, tomatoes, and balsamic vinegar.

Substitutions

Sometimes you may want, or need to switch up ingredients based on what is available or dietary needs. Below are a list of possible substitutions:

  • Chicken - Try chicken thighs instead of chicken breasts.
  • Balsamic Vinegar - white balsamic vinegar can provide a milder, slightly sweeter taste.
  • Vegetables - Try adding shallots, onions, zucchini or peppers for a different twist.

Variations

These variations allow you to modify the recipe, whether you are looking to change the flavor or just switch up a few ingredients. They one of these ideas to add your own personal touch!

  • Add capers for a Mediterranean twist.
  • Toss in some spinach for a nutrient boost.
  • Serve over rice, quinoa, or couscous instead of pasta.
  • Swap chicken for a different protein like salmon or shimp.

Storage

Can be stored in an airtight container in the fridge for up to 3 days. Reheat on the stove or in the microwave.

Top Tip

For more flavor you can marinate the chicken in the balsamic vinegar 30 minutes prior.

One Pot Balsamic Chicken and Pasta

This One Pot Balsamic Chicken and Pasta is a flavorful, easy to make dish perfect for busy weeknights. Juicy chicken, tender pasta, and fresh vegetables are simmered together in a tangy balsamic sauce, creating a delicious and wholesome meal in just one pan. With minimal cleanup and maximum flavor, this recipe is a family favorite that's sure to impress!

Ingredients

  • 3 chicken breasts cut into 12 pieces and pounded
  • Italian seasoning to taste
  • Salt and pepper to taste
  • 1 tablespoon butter
  • ⅓ cup balsamic vinegar
  • 2 tablespoon honey
  • 1 tablespoon minced garlic
  • 1 cup halved grape tomatoes

Instructions

  • Season the chicken with Italian seasoning, salt, and pepper.
  • In a large pot, melt the butter over medium heat. Add the chicken and cook on both sides until golden.
  • In a bowl, mix the balsamic vinegar, honey, and garlic to create the sauce. Pour over the chicken.
  • Add the grape tomatoes on top of the chicken.
  • Cover and simmer on low heat for about 12 minutes, or until the chicken is cooked through.
  • Enjoy topped with some fresh Parmesan cheese. It’s the perfect recipe to top on a bed of noodles too!
