Instructions

Making these pancakes is as easy as mixing, cooking, and enjoying! With just one bowl and a few simple steps, you’ll have golden, fluffy pancakes ready in minutes. Whether you’re cooking on a griddle or a stovetop pan, follow these steps for the perfect stack every time.

A blender filled with pancake ingredients, including eggs, Greek yogurt, flour, and vanilla extract.
  1. Step 1: Mix the Batter – In a bowl, or even a blender, mix together the eggs, Greek yogurt, vanilla extract, and maple syrup. Add flour, baking powder, and salt, stirring until just combined. The batter will be thick!

  1. Step 2: Preheat Cooking Surface – Heat a pan or griddle over medium-low heat. Lightly grease with butter or nonstick spray.

  1. Step 3: Cook the Pancakes – Pour batter onto the pan, either traditionally, or make fun shapes. Cook until bubbles form on the surface and the edges look set, about 2–3 minutes. Flip and cook another 1–2 minutes until golden brown.

  1. Step 4: Serve and Enjoy – Stack them up or try making a Tic, Tac, Toe game out of them.

Hint: If the batter feels too thick, add a splash of milk to loosen it up. If it’s too runny, sprinkle in a little extra flour.

Substitutions

If you know how to make the recipe fit a certain diet, let the reader know here. Don't fake it - only provide guidance on topics you have actual experience with.

  • Swap Greek yogurt for sour cream if needed.
  • Use honey instead of maple syrup.
  • Gluten-free? Use a 1:1 gluten-free flour blend.

Variations

Want to switch things up? These pancakes are super versatile! Try adding fresh fruit, chocolate chips, or a dash of cinnamon for a fun twist.

  • Berry Boost: Fold in blueberries or chopped strawberries.
  • Chocolate Chip Fun: Add mini chocolate chips for a kid-friendly twist.
  • Cinnamon Swirl: Mix in ½ teaspoon of cinnamon for extra warmth.

Equipment

All you need is a mixing bowl, a whisk, and either a griddle or a non-stick pan to cook up these fluffy pancakes to perfection.

  • Mixing bowl or blender
  • Whisk
  • Measuring cups & spoons
  • Nonstick pan or griddle
  • Spatula
  • Cooking Spray

Storage

Store leftover pancakes in an airtight container in the fridge for up to 3 days. Reheat in the toaster or on a warm pan. Freeze for up to 2 months—just separate layers with parchment paper!

Top Tip

For extra fluffy pancakes, let the batter rest for 5 minutes before cooking—this helps the baking powder activate!
