Ingredients
  

  • 2 eggs
  • 1 cup plain or vanilla Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 cup flour
  • 2 tablespoons baking powder
  • ½ teaspoon salt
  • 2 tablespoons maple syrup
  • cooking spray

Method
 

  1. Blend & Mix: Add all ingredients to a blender and blend until smooth. Alternatively, whisk everything together in a mixing bowl until fully combined.
  2. Preheat & Grease: Heat a griddle or nonstick pan over medium heat. Lightly grease with cooking spray or butter.
  3. Cook Pancakes: Pour batter onto the griddle, shaping it into a tic-tac-toe board (or traditional circles). Cook until bubbles form on the surface, about 2 minutes. Flip and cook another 1–2 minutes until golden brown.
  4. Serve & Enjoy: Remove from the griddle and serve warm with maple syrup, fresh fruit, or any favorite toppings. Enjoy playing and eating!
