Ingredients

  • 4-5 salmon fillets
  • ¼ cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon oil
  • 1 teaspoon minced garlic
  • ½ teaspoon ground ginger
  • 1 cup fresh pineapple chunks
  • ¼ cup diced red onion
  • Salt and pepper to taste
  • Oil spray
  • Fresh parsley for garnish

Instructions

  • Preheat oven to 375°F and spray a glass baking dish with oil.
  • Whisk together soy sauce, honey, oil, garlic, and ginger in a small bowl.
  • Arrange salmon fillets in the baking dish and coat with glaze.
  • Add pineapple chunks and red onion on top, then spoon on more glaze and season with salt and pepper.
  • Bake approximately 20 minutes, or until salmon flakes easily. (Optional: Broil for 3–5 minutes for a caramelized top.)
  • Garnish with parsley and serve.

Notes

  • Marinating not required: This recipe is delicious even without extra marinating time since the glaze is spooned generously over the salmon.
  • Broiling: Optional broil step at the end adds caramelization for a restaurant-style finish.
  • Serving ideas: Serve over Rice Pilaf or with Cucumber Tomato Salad for a complete meal.
  • Prep ahead: You can prepare the glaze ahead of time and refrigerate for up to 2 days.
