- Preheat oven to 375°F and spray a glass baking dish with oil.
- Whisk together soy sauce, honey, oil, garlic, and ginger in a small bowl.
- Arrange salmon fillets in the baking dish and coat with glaze.
- Add pineapple chunks and red onion on top, then spoon on more glaze and season with salt and pepper.
- Bake approximately 20 minutes, or until salmon flakes easily. (Optional: Broil for 3–5 minutes for a caramelized top.)
- Garnish with parsley and serve.
