Ingredients
  

  • 4-5 salmon fillets
  • ¼ cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon oil
  • 1 teaspoon minced garlic
  • ½ teaspoon ground ginger
  • 1 cup fresh pineapple chunks
  • ¼ cup diced red onion
  • Salt and pepper to taste
  • Oil spray
  • Fresh parsley for garnish

Method
 

  1. Preheat oven to 375°F and spray a glass baking dish with oil.
  2. Whisk together soy sauce, honey, oil, garlic, and ginger in a small bowl.
  3. Arrange salmon fillets in the baking dish and coat with glaze.
  4. Add pineapple chunks and red onion on top, then spoon on more glaze and season with salt and pepper.
  5. Bake approximately 20 minutes, or until salmon flakes easily. (Optional: Broil for 3–5 minutes for a caramelized top.)
  6. Garnish with parsley and serve.

Notes

  • Marinating not required: This recipe is delicious even without extra marinating time since the glaze is spooned generously over the salmon.
  • Broiling: Optional broil step at the end adds caramelization for a restaurant-style finish.
  • Serving ideas: Serve over Rice Pilaf or with Cucumber Tomato Salad for a complete meal.
  • Prep ahead: You can prepare the glaze ahead of time and refrigerate for up to 2 days.
