Mediterranean Chopped Salad with Sumac

A fresh, simple chopped salad of cucumber, tomato, onion, and herbs, brightened with sumac and lemon. Ready in minutes, made from pantry staples, and even better the next day.

Equipment

  • sharp knife

  • Large mixing bowl

Ingredients

  • 6 Persian cucumbers diced small
  • 2 tomatoes diced
  • ½ onion finely diced (red or sweet)
  • ½ bunch parsley chopped
  • 1 tablespoon fresh mint finely diced
  • 1 teaspoon ground sumac
  • 3 tablespoons extra virgin olive oil
  • ½ lemon freshly squeezed
  • Salt and pepper to taste
  • pomegranate seeds optional
  • diced pita or naan optional

Instructions

  • Dice the cucumbers, tomatoes, and onion into small, even pieces.
  • Add the chopped parsley and mint.
  • Sprinkle in the sumac, then drizzle with olive oil and lemon juice.
  • Season with salt and pepper, and toss to combine.
  • Optional to add pomegranate seeds.
  • Optional to add pita chips or air fried pita or naan bread. To air fry pita chips or naan bread dice into crouton sided pieces. Spray with avocado oil and air fry for about 7 minutes.

Notes

Tips: Dice everything to a similar small size for the most balanced bite. Holds well in the fridge, and the flavor is even better the next day.
Notes: Optional juicer for the lemon, though squeezing by hand works fine.
