Easy Chocolate Chip Protein Muffins with Banana

These high-protein muffins are perfect for breakfast, snack time, or after-school fuel. Made with banana, protein powder, and chocolate chips, they’re soft, sweet, and full of clean energy.

Ingredients
  

  • 2 cups all purpose flour I have done half wheat flour and half all purpose flour. Very good!
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ cup sugar Or maple syrup
  • cup melted butter I have done half butter half coconut oil too!
  • 2 eggs
  • cup milk
  • 1 banana mashed
  • ½ cup scoops protein powder
  • cups chocolate chips divided
  • Decorative sugar optional

Method
 

  1. Preheat oven to 450°F. Line or grease muffin tray.
  2. In a large bowl, combine flour, baking powder, baking soda, sugar, protein powder, and 1 cup chocolate chips.
  3. In another bowl, whisk melted butter, eggs, milk, and mashed banana.
  4. Fold dry ingredients into wet ingredients until just combined.
  5. Scoop into muffin tray. Top with remaining ¼ cup chocolate chips and decorative sugar.
  6. Bake 5 minutes at 450°F, then reduce oven to 375°F and bake for 15 more minutes.
  7. Cool before enjoying!

  • Don’t overmix the batter — Stir just until combined to keep muffins light and tender. Overmixing can lead to dense, rubbery results.
  • Use ripe bananas — The riper, the better! Bananas with brown spots give the best natural sweetness and moisture.
  • Customize your protein powder — You can use vanilla, chocolate, or unflavored protein. Each adds a slightly different flavor, so choose what fits your taste.
  • Watch your oven temp — Starting hot (450°F) and reducing the temp helps create bakery-style muffin tops. Don’t skip this step!
  • Freeze for later — These freeze beautifully! Just cool completely and store in a freezer-safe container. Warm in the microwave for a quick grab-and-go snack.
  • Mini muffin option — Use a mini muffin pan and reduce bake time by 5–7 minutes for bite-sized snacks perfect for kids.
  • Add-ins welcome — Mix in a tablespoon of nut butter, swap chocolate chips for blueberries, or add a sprinkle of cinnamon to make it your own.
