Crispy Oven Baked Beef Tacos

Ingredients
  

For the Ground Beef Filling:
  • pounds ground beef
  • ½ cup diced white onion about ½ medium onion
  • 2 tablespoons tomato paste
  • 2 tablespoons water as needed
Homemade Taco Seasoning:
  • 1 tablespoon chili powder
  • teaspoons ground cumin
  • teaspoons paprika
  • ¾ teaspoon garlic powder
  • ¾ teaspoon onion powder
  • ¾ teaspoon dried oregano
  • ¾ teaspoon salt to taste
  • ½ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes or cayenne pepper optional, for heat
For the Tacos:
  • 10-12 small flour tortillas
  • 1½ to 2 cups shredded cheese cheddar, Mexican blend, or pepper jack
  • Avocado oil spray or similar cooking spray
For Toppings:
  • shredded lettuce
  • 1 cup pico de gallo homemade or store-bought
  • 1 cup diced tomatoes optional
  • 1 lime cut into wedges (optional)
For Serving:
  • 1 cup cilantro lime crema such as Don Pancho

Equipment

  • Skillet
  • baking sheet
  • Spatula

Method
 

  1. Sauté onions until softened.
  2. Add ground beef and cook through.
  3. Stir in seasoning + tomato paste. Add water if needed.
  4. Spray tortillas, fill with beef + cheese, fold.
  5. Bake at 425°F for 10–12 minutes.
  6. Broil 1–2 minutes until crispy.
  7. Add toppings and cilantro lime crema.

Notes

Shredding your own cheese instead of using pre-shredded helps it melt better and gives you that perfectly cheesy, crispy baked taco texture.
Broiling step is key for crispiness.
Don’t overfill tortillas.
Great for leftovers.
