Crispy Baked Chicken Skewers with Peach Marinade

Crispy baked chicken skewers marinated in Fresh Press Farms Organic Peach Cider Vinegar, coated in golden Panko breadcrumbs, and baked at 375°F until perfectly tender inside.   • 4 chicken breasts cut into 1.5-inch cubes
  • cup olive oil
  • 1 tablespoon garlic powder
  • 1 tablespoon Italian seasoning
  • 1 tablespoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup Fresh Press Farms Organic Peach Cider Vinegar
  • 1 tablespoon honey or maple syrup

  • 3 cups Panko breadcrumbs
  • Olive oil or avocado oil spray

  • Mixed greens
  • 2-3 fresh peaches sliced
  • ¼ red onion thinly sliced
  • cup pecans
  • cup feta cheese
  • ½ cup blackberries
Ingredients — Peach Cider Vinegar Dressing
  • cup olive oil
  • ¼ cup Fresh Press Farms Organic Peach Cider Vinegar
  • 1 tablespoon Dijon mustard
  • 2-3 tablespoon maple syrup or honey
  • 1 tablespoon minced garlic
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Equipment

  • Rimmed baking sheet
  • Parchment paper
  • Meat thermometer
  • Shallow bowl for Panko
  • Large mixing bowl or zip-lock bag
  • Wooden skewers (soaked 20 min) or metal skewers
  • Oil spray bottle

Method
 

  1. Soak the skewers. Place wooden skewers in a shallow dish of water and soak for at least 20 minutes before using.
  2. Marinate the chicken. In a large bowl or zip-lock bag, whisk together the olive oil, garlic powder, Italian seasoning, paprika, salt, pepper, peach cider vinegar, and honey. Add the cubed chicken and toss well to coat. Marinate for at least 20 minutes or up to 2 hours in the refrigerator. Do not exceed 2 hours.
  3. Coat in Panko. Pour Panko breadcrumbs into a shallow bowl. Remove chicken cubes one at a time from the marinade and press firmly into the Panko on all sides until well coated.
  4. Skewer the chicken. Thread the Panko-coated chicken onto the soaked wooden skewers and place on a parchment-lined baking sheet. Spray generously with olive oil or avocado oil spray.
  5. Bake at 375°F. Preheat oven to 375°F. Bake for 25 to 35 minutes, flipping the skewers halfway through and spraying the second side with oil. Begin checking with a meat thermometer at 25 minutes. Chicken is done when the internal temperature reaches 165°F.
  6. Broil for finish (optional but recommended). Once chicken reaches 165°F, switch oven to broil for 2 to 3 minutes, watching closely. This gives the Panko a golden, crispy finish.
  7. Make the salad dressing. Whisk together olive oil, peach cider vinegar, Dijon mustard, maple syrup, garlic, salt, and pepper until combined. Taste and adjust. Toss with mixed greens, sliced peaches, red onion, pecans, feta, and blackberries just before serving.
  8. Serve. Serve baked chicken skewers hot alongside the peach summer salad and your choice of dipping sauce; peach glaze, ranch, or both.

Notes

On marinating: Even 20 minutes makes a real difference with this peach cider vinegar marinade. Don't skip it even if you're short on time.
On cook time: 25 to 35 minutes is a range, not a guarantee. Oven temps vary and a full pan bakes slower than a sparse one. Thermometer is the only reliable test.
On broiling: Do not walk away during the broil step. Two to three minutes is all it takes and it makes a visible difference in color and crunch.
On the dip: A homemade peach glaze dip pairs perfectly with the peach marinade flavor. Ranch is the family backup and always gets cleaned up too.
