Authentic Greek Cucumber Tomato Salad with Homemade Croutons

This authentic Greek cucumber tomato salad is bright, refreshing, and full of Mediterranean flavors. Crisp cucumbers, juicy tomatoes, tangy feta, and briny olives come together with a simple homemade dressing and optional crunchy croutons for a modern twist.

Ingredients
  

Salad Ingredients:
  • 4-6 baby or Persian cucumbers chopped
  • 2-4 Roma or large handful grape tomatoes chopped
  • ½ red onion thinly sliced
  • Optional: ½ cup garbanzo beans
  • ¼ cup red or Kalamata olives
  • 4 oz block feta chopped
  • 2 tablespoon fresh parsley chopped
Dressing Ingredients:
  • ½ cup extra virgin olive oil
  • 2 teaspoon dried oregano
  • 3 tablespoon red wine vinegar
  • 2 tablespoon lemon juice
  • Salt and freshly ground black pepper to taste
Homemade Crouton Ingredients:
  • Sandwich bread cubed
  • salt
  • garlic powder
  • avocado oil spray

Equipment

  • Large mixing bowl
  • cutting board
  • Chef’s knife
  • measuring spoons
  • Small jar with lid or blender
  • Wooden spoon or salad tongs
  • Air Fryer
  • Serving Bowl

Method
 

  1. Chop cucumbers, tomatoes, and red onion; combine in a large bowl.
  2. Add olives, garbanzo beans, and feta.
  3. Whisk or shake together olive oil, oregano, red wine vinegar, lemon juice, salt, and pepper. Pour over salad.
  4. In a separate bowl combine cubed bread, salt, garlic powder and avocado oil. Toss gently.
  5. Air fry 5-7 minutes or until golden brown.
  6. Combine salad ingredients. Top with croutons and parsley. Serve immediately.

  • For the freshest flavor, prep the vegetables shortly before serving.
  • Keep the dressing separate until ready to serve to prevent the cucumbers and tomatoes from becoming watery.
  • Homemade croutons add a delightful crunch but are optional if you want a more traditional Greek salad.
  • Use a block of feta instead of pre-crumbled for the best texture and creaminess.
