- Chop cucumbers, tomatoes, and red onion; combine in a large bowl.
- Add olives, garbanzo beans, and feta.
- Whisk or shake together olive oil, oregano, red wine vinegar, lemon juice, salt, and pepper. Pour over salad.
- In a separate bowl combine cubed bread, salt, garlic powder and avocado oil. Toss gently.
- Air fry 5-7 minutes or until golden brown.
- Combine salad ingredients. Top with croutons and parsley. Serve immediately.
